One Pot Peanut Noodles

Anyone else ever feel like you are the star of a gourmet chef reality show and the goal is to use every cooking utensil and pot you can? The struggle is so real. That's why I'm so stoked to share this one pot dinner. (Okay, so it's two if you add chicken to it, but we can't win at everything)


1-2 organic chicken breasts

green onion 

noodles of your choice -- I used organic spaghetti


peanut sauce:

1/3 tablespoon peanut butter 

2 tablespoons soy sauce 

1/4 cup rice vinegar 

1/3 cup chicken broth (veggie if you're opting out of the chicken for a vegetarian friendly meal) 

Preheat oven to 350 degrees and bake chicken breast for 40 minutes 

add 3.5 cups of water to about 8oz of noodles in a large pot

add peanut sauce 

bring to a boil over high heat, then reduce to medium-low heat and stir the pasta every few minutes

After about 15 minutes, the sauce will begin to thicken

Add chicken + some of the diced green onion to the pot 

Using tongs, place pasta mixture into bowls and garnish with peanuts + fresh green onion
